What kind of vegetables can you sous vide cook?
You can sous vide cook all kinds of vegetables. There are no restrictions! This is one of my favorite methods of cooking.
The only thing that you need to watch out for is that when you cook your vegetables, make sure that they don’t overlap.
You want them to be in their own individual spaces so that they stay separate.
Anything that will fit into a plastic bag and has a low water content like carrots, broccoli, cauliflower, mushrooms, and corn on the cob.
Time and temperature to sous vide cook vegetables
This depends on the vegetable. Sous vide works well for a wide variety of vegetables, and you’ll find suggestions in the sous vide recipe for cooking potatoes and corn.
Cooking times will vary depending on the thickness of your vegetables. For instance, carrots take significantly longer than zucchini to cook through.
If you are cooking vegetables, such as carrots, green beans, or potatoes, they should take an hour and a half, two hours, or more depending on how hot your oven is.

There are a lot of questions about sous vide that I get asked all the time, so I thought I would compile them into a FAQ for everyone’s convenience.
Can I Sous Vide multiple different types of vegetables at once?
Sure! You can sous vide multiple different types of vegetables at once. All you need is a large sous vide bag.
How many bags can I Sous Vide at once?
You can sous vide as many bags as you want.
As long as the water is running and the temperature is set, it will cook the meat in that bag for the same amount of time that the initial temperature setting will be held.
So if you set the internal temperature to 180 degrees Fahrenheit for 30 minutes, then cook 10 bags of food at a time, they will all cook for 30 minutes.
If you want to sous vide 15 bags, just set the temperature to 190 degrees Fahrenheit for 20 minutes, and cook those 15 bags at once.
Should I marinate/season my vegetables before Sous Vide?
I usually do not season anything before sous vide. It can vary based on what you are cooking, but generally, if it is a quick cook, I will add seasoning after.
If you are cooking for a longer time, then it is fine to add seasoning before, as long as it is evenly distributed throughout the food.
Should I cut my vegetables first before sous vide? (for mushrooms, asparagus, etc)
That’s a great question. If you like mushrooms, you should cut them when they are young. It completely depends on what type of vegetables you are trying to sous vide.
Can You Sous Vide Green Beans?
Yes, you can sous vide green beans, it is a great dish that takes minimal prep time.
The texture of the green beans will be soft and delicious. For this recipe, I would use the smallest (1/4″ or 6mm) diameter sous vide bag as well as the smallest vacuum sealer.
Can You Sous Vide Broccoli?
If you can sous vide broccoli it will be the best-tasting broccoli ever!

Sure, you can sous vide cauliflower. It’s not a hard thing to do, so you just have to decide if you want to use a water bath or an oven.
I have done both methods. Both work great.

That depends on the vegetable. It could be as little as 30 minutes or as long as 2 hours.
